Gujo Ayu The Nagara River originates from the Shirayama Mountains, then flows through the Okumino Mountains, and therefore considered to be flowing in one of the most naturally blessed areas in Japan. The Gujo Ayu (sweetfish) which grew up with good quolity of water with steep flow and good condtion of algae on the rocks of the bottom of Nagara River, has a top class scent and flavor, including its rich meat and gut.
