Enjoy the local sake from the Nagara River, associated with a legend "a path way of the rising dragon" and the duck cuisine which is known as the Imperial Household Agency meal.
The Nagara River is flowing from North to South in the middle of region in Japan. The source of the river is from Shirayama, which is famouse for the worshiping the Shugendo shamanism, bordering Gifu, Toyama, Ishikawa, and Fukui Prefectures. According to the Chinese geomancy, Feng Shui, the spirit in Japan is gathering on this mountain from all over Japan and the stream of the Nagara river which has its source in the mountain, is said to be the path of the rising dragon.
Oda Nobunaga is known as a warrior general, but he is also famous as an intellectual. He was fond of tea and Noh dancing as well as hawk hunting. He must have eaten duck as well during his hunting.
Ushou has the title of "The Board of the Ceremonies of Imperial Household Agency," and has been in a good relationship with the Royal family for a long time.
In the Imperial Household Agency, there is an area for hunting, and it has been capturing ducks using their historical hunting methods. The "duck teppanyaki" is a cuisine based on a recipe from the Imperial Household.
You can taste and compare the Koshu, Ginjo-shu, and Junmai-shu together with the duck cuisine. You will enjoy finding a sake of your preference, as we have prepared some great sake that goes well with the meal.
Genbun Kiku Daiginjo
Daiginjo sake made from flower yeast, which allows a strong flavor, but also a refreshing scent. It can be enjoyed cold or warm but we would not recommend it to make hot.
Genbun is from a brewery located close to the source of Nagara River.
Sanyaho
Junmai Sake made from “Minokin”, a rice specially produced in the city of Seki, grown without using pesticides since rice planting. For it was made through Ginjo method, it has rich aroma and lightness, finished in such way that you never get weary of its taste.
Premium Tenga
A Sake made for export. Since it is produced through a “Sur Lie” (on lees/unrefined) process it has an aromatic scent and the unique strong taste of an aging Sake.
Kinkazan Junmai Sake
It uses HIDAHOMARE rice which is ideal for Sake brewing and do not use any rice from outside the prefecture at all. Junmai Sake in which lives the delicious taste of rice is obtained by manual operations. Combined with a food culture of strong taste, the Junmai Sake rich and deep flavor offers a good balance with acidity, making it a Sake suitable to drink during meals.
Nihonizumi Hunakuchitori Daiginjo
Unfiltered Daiginjo obtained through low temperature fermentation. The Hunakuchitori has flavor characteristics featuring a texture which provides a feeling of thickness in the mouth. Having an aroma of rice and fruits aromas, it is a Sake indispensable to fully enjoy duck dishes.
