Kunizakari sake-brewing activity
If you enjoy drinking Japanese sake and are interested in learning how it is brewed, this activity is sure to fascinate you. You will experience sake brewing processes starting from the steaming of the rice and the preparing of the junmai daiginjo (special brew), through to the bottling. You will also receive your own freshly pressed junmai daiginjo as a souvenir.
Preparation
Water,Steamed rice is mixed with koji mold (aspergillus oryzae) and rice malt and is incubated over a 2-day period to form koji. Once the above task is complete, the mixture is then transferred into a preparation tank and throughly mixed with paddles.
2-day course tour itinerary
- Day 1
Steam rice and prepare junmai daiginjo. - Day 2 (3 weeks after the Day 1)
Press the moromi mash prepared three weeks earlier and bottle the sake. After the brewing, a review meeting covering the two days' activities is held with freshly pressed sake and Japanese soba noodles from Sarazan.

Notes
■Participation eligibility
- Over 20 years of age, healthy and with an appreciation of Japanese sake
- Able to participate on both days (applicable only for the 2-Day Course)
- Sufficient stamina to work throughout the day (applicable only for the 1-Day Course)
■Maximum number of participants
15 for each course
* Please note that the courses may be canceled due to bad weather, disasters or accidents etc.
* Please be punctual on the day of the tour. Register at the Sake Culture Museum.
* Sake will be served on the day. Please take public transportation to avoid drink-driving.
* Please do not wear strongly scented cosmetic items such as perfume etc.
* Please attend the tour wearing suitable clothing for the work. Also, it is not permitted to work wearing accessories such as earrings and necklaces etc.
