Sake brewery tour: Fukumitsuya

An old-established Kanazawa sake brewery founded in 1625. Various junmai-shu brands, skin lotion, and food, as well as items produced from fermented rice are sold, and various sakes can be taste-tested at the adjacent bar. There is a full sake brewery tour activity (90 minutes), in which visitors watch a video, tour the brewery and see the 100-year old water used for sake-making, before tasting freshly pressed new sake varieties or seasonal limited editions. A short, relaxed course (30 minutes) is also available, free of charge.* Freshly pressed new varieties of sake may not be available depending on the season.

Tasty sake is nurtured through the efforts of these sake brewers who are committed to making junmai-shu with strict observance of the principles of microorganisms.

Rain that falls on the sacred Mt. Haku penetrates deep into the ground and finally emerges again at Fukumitsuya a century later, after being filtered through layers of seashell deposits

Pressing

The matured moromi is inserted into bags and the sake is slowly squeezed out in a press
