The history of sake-brewing in Omi through a traditional brewery

Fujii Honke, founded in 1831, has been brewing sake since the Edo period, and donating sake for the Niinamesai harvest ritual. Made entirely of zelkova wood and designed by the family head, the brewery awes visitors with its size.
Tour the brewery, and you’ll see first-hand the care and expertise the brewers put into traditional technique, nurtured by the history, culture, and nature of the Omi region.

Activity tour itinerary

  • Tour of the Higashi-gura, built in the Taisho era and designated a National Tangible Cultural Property
  • Taste the actual water used in sake-brewing
  • The vat where 20 bales of pure-white polished rice (1200 kg) are steamed
  • The fermentation area, where water and koji mold are added to the steamed rice
  • The storage building, where the raw sake rests quietly until it’s ready
  • Taste the Fujii Honke sake, and buy some for a souvenir
