設"About 90 % of Shitara is covered in forests and mountains , many of which are over 1,000 m high. Sekiya Brewery Co., Ltd. in Shitara, certified as an Aichi Quality company, has lead the sake breweries in the Oku Mikawa region. Since its foundation, Sekiya Brewery has been producing refined sake. They have been streamlining sake production by actively employing machines and improving their technical abilities, aiming to create high-quality sake with the umami flavor of rice. Recently, Sekiya Brewery has taken on a new challenge in preserving local agriculture by promoting the variety of local specialty foods, and spreading Japanese sake culture through local sake-brewing activities and made to order sake.
